Ingredients
Filling
- 4 tablespoons / 50g Butter
- 2 teaspoons / 5g Cinnamon (ground)
- Sweetener to taste
Frosting
- 3 tablespoons / 70g Creme cheese
- 2 tablespoons / 50g Greek yogurt
- ½ teaspoon / 4ml Vanilla extract
- Keto sweetener of choice to taste
Dough
- 3 Eggs
- ½ cup / 60g Coconut flour
- 2 tablespoons Baking powder 11g
- 2 tablespoons / 30g Butter (melted)
- ½ teaspoon / 3ml Vanilla extract
- Keto sweetener to taste
- 2 ½ cups / 250g Mozarella
- 2 oz / 55g Cream cheese

How to make Keto cinnamon rolls
Filling
- Whisk butter until white, fluffy and creamy.
- Add cinnamon and sweetener to taste.
Frosting
- Whisk creme cheese until creamy. Add yogurt, vanilla extract and sweetener of choice.
Dough
- Mix eggs, coconut flour, baking powder, melted butter, vanilla extract and sweetener.
- Melt mozzarella and cream cheese in the microwave oven on high power for a minute.
- Stir. Place it back for another minute then stir again.
- Mix the mozzarella with the dough.
- Gather the dough into a ball then roll it out. Use parchment paper or oil the working surface.
- Spread the filling on top. Alternatively, simply sprinkle the cinnamon and sweetener on top of the dough, leaving the butter out.
- Roll the dough up. Use a spatula and a bit of oil if necessary.
- Cut the roll into 1″ / 2.5cm slices.
- Place the cinnamon rolls onto a parchment paper layered baking tray.
- Put them into a 390°F / 200°C preheated oven until golden brown spots start to appear, about 15 – 20 minutes.
