Keto Cinnamon Roll Recipe - Coconut Flour

Instructions
Filling
Whisk butter until white, fluffy and creamy.
Add cinnamon and sweetener to taste.
Frosting
Whisk creme cheese until creamy. Add yogurt, vanilla extract and sweetener of choice.
Dough
Mix eggs, coconut flour, baking powder, melted butter, vanilla extract and sweetener.
Melt mozzarella and cream cheese in the microwave oven on high power for a minute.
Stir. Place it back for another minute then stir again.
Mix the mozzarella with the dough.
Gather the dough into a ball then roll it out. Use parchment paper or oil the working surface.
Spread the filling on top. Alternatively, simply sprinkle the cinnamon and sweetener on top of the dough, leaving the butter out.
Roll the dough up. Use a spatula and a bit of oil if necessary.
Cut the roll into 1" / 2.5cm slices.
Place the cinnamon rolls onto a parchment paper layered baking tray.
Put them into a 390°F / 200°C preheated oven until golden brown spots start to appear, about 15 - 20 minutes.
