Poppy Seed Cake [Keto]
Healthy dessert made of poppy seed with a touch of coconut. Naturally sweetened with banana and made exciting with some juicy apple shreds.

Ingredients

/ 200g Poppy-seed
ground
▢
3½
oz
/ 100g Shredded coconut
▢

Banana
▢
1
medium Apple
grated
▢
5
Eggs
separated
▢

teaspoon
Baking powder
follow instructions on packaging

tablespoon
Honey or sweetener of choice
optional for additional carbs and sweetness
Instructions
Preheat oven to 350°F / 180°C.
Grind poppy-seed.
Grind the coconut too.
Separate eggs.
Beat egg whites until hard peaks form.
Mash bananas and grate apple.
Mix them with the yolks, ground poppy-seed, coconut and baking powder.
Carefully fold in egg whites.
Pour the mixture into a tray and put it in the preheated oven for 30 minutes to bake.
Let it cool down before serving.
Notes
Note: For added pleasures serve it with vanilla custard.
